She began her acting career with roles in television series such as "Jamie Johnson" (2017–2018) and "Butterfly" (2018). Gibson gained significant recognition for her portrayal of Kelly Neelan in the long-running ITV soap opera "Coronation Street," a role she played from 2019 to 2022. Her performance earned her the Best Young Performer award at the 2022 British Soap Awards.
In 2023, Gibson took on the role of Ruby Sunday, the companion to Ncuti Gatwa's Fifteenth Doctor in the iconic BBC science fiction series "Doctor Who." She made her debut in the 2023 Christmas special, "The Church on Ruby Road," and continued in the role during the fifteenth series in 2024.
